Highland Blue is considered to be one of Canada’s most distinctive artisan blue cheeses. Its artistry was recognized and awarded with a medal at the Royal Ontario Winter Fair. This cheese is a labor of love requiring much work, including piercing by hand 120-130 times per wheel to promote "blueing." Highland Blue wheels are tall, regal and rustic. As a semi-firm unpasteurized sheep’s milk blue cheese, it has a dense, antique ivory to golden paste with prominent vertical teal-blue colored veining throughout, and a mottled natural rind. Notice a distinct sharpness, salty richness and earthy flavour with a bit of a kick in the piquant finish. The closest thing to a true Roquefort made in Canada. Approx. 180 g.
Ontario Cheese Union is dedicated to the distribution of small batch, primarily farmstead dairy cheeses to a wider audience. Produced from the milk of cow, goat, sheep and water buffalo, every cheese is handpicked as one of the most delicious available from family owned, Ontario dairy farms.
