Back Forty Creamery in Mississippi Station Ontario, is one of the smallest sheep dairies in the province. Bonnechere is made with unpasteurized ewe's milk, and is similar to some Basque (Northern Spain) cheeses. This visually stunning semi-firm cheese is lightly pressed, then its rind is toasted over an open flame prior to aging. The delicious tangy and fruity body with a hint of hickory smoke, makes this a unique cheese to Canada. Approx. 180 g.
