Whole spelt berries (also called groats) are great substitute for rice as a side dish on their own, with stir fries, added to soups and stews, in a grain salad with other vegetables and dried fruits, or as a topping for a green salad. Soak the quantity you want to use overnight, and then drain and add new water, and boil for about 30 min. Add a bit of salt while cooking. The berries retain a chewy texture, and do not double in size like rice does. They have a rich nutty flavor. Available in 1.5 kg bag for $7.25 or 3.5kg for $15.00
